Smells that represents how strong it is. But don't let that fool you this is a surprisingly smooth and oaky bourbon. The finish, while harsh when not iced is smooth and almost scotch like. You taste the wood, you taste the Kentucky, you taste the freedom. Noah's mill gets a solid 8.5/10 for its strength and passion.

The nose was harsh. The first taste showed the colors of the whisky. It's strong, but it grows on ya. Every sip makes you respect the strength. It's delicious. The wine bottle is  curious; the cork is interesting. I feel like these people know how to party that made this whisky. Overall respect for Kentucky, 8/10.

I have been anticipating my first appearance at Whisky Tuesdays for weeks now. All the hype is real! Great food from chef Jeff and solid selection of whisky from Tay Schlac. Everything aside from the whiskey was strong overall. You could definitely tell it was over 50%, but once you added ice the flavor really comes out. Smokey as fuck would be an accurate description. The oak really shined through. I would give Noah's Mill a 7.5/10. Looking forward to another guest appearance.
